6 oz. salmon filet
1 Tablespoon lemon juice
2 thin slices lemon
1 tablespoon minced parsley
1/8 teaspoon dry dill OR 1 teaspoon fresh dill (minced)
1/4 teaspoon minced garlic
Salt and pepper
Directions: Preheat oven to 400 degrees. Spray a baking dish with nonstick spray. Salt and pepper both sides of the fish, and lay in the prepared dish. Squeeze 1 tablespoon lemon juice over the fish. Sprinkle the fish with minced parsley, garlic, and dill. Lay the lemon slices over the top. Bake 20 to 25 minutes or until the internal temperature reaches 145 degrees. Fish should flake with a fork. Allow to cool slightly before placing on your salad so the lettuce doesn’t wilt.
