This leafy green, blue and purple vegetable is all the rage these days. I did some research and found out why. The nutritional breakdown of borecole, as it is also known, is outstanding and has some interesting properties.
One cup of kale contains only 36 calories, five grams of fiber and no fat. Per calorie, kale provides more iron than beef. It’s also packed with vitamin K, which can help protect against various cancers and help people suffering from Alzheimer’s disease.
Antioxidants, such as carotenoids and flavonoids along with vitamins A and C, and are very beneficial for your immune system, and kale is high in all of those as well.
Aside from its anti-inflammatory properties, it is high in calcium and is great detox food filled with fiber and sulfur, which helps keep your liver healthy. I don’t know about you, but it’s definitely on my grocery list!
